Assesment Cooking Lesson




This lesson was my assessment cooking lesson and I cooked Napoleon pasta. I had been away two weeks prior tot his lesson so i had missed the practice lesson but i made up for it at home. Unfortunately because I had been away Ms Goodchild didn't have my recipe but that problem was quickly resolved with the help of Ms Goodchild and my partner Emma. As soon as i had my ingredients i boiled water in the sauce pan for the pasta and turned the fry pan on to a medium heat. I then peeled 1 brown onion and cut it and once the fry pan was ready i heated 1 tbs of olive oil and then added the onion. I started to prepare the parsley for the sauce by washing it, cutting the stalks of and cutting it into small pieces. I stirred the onion often until it had softened lightly. I had 2 garlic cloves crushed prior so i added them to the onion stirring for a minute. Once the water had boiled i added the pasta with a pinch of salt. I then stirred in the tomatoes and the tomato paste to the onions and garlic and increased the the heat to high. I left it for approximately 6 minutes stirring occasionally. Once the sauce had thickened i added the parsley and Castor sugar. Once the pasta was cooked i drained it and took the sauce of the stove. I got a bowel ready and added the pasta and sauce on top. For appearances i had saved an extra piece of parsley for the top of the meal. I had plenty of time as this meal was considered simple so i was in no rush. I served Emma the meal with a drink i had brought for her and then o started to clean up. Overall i think Emma enjoyed this meal as she loves pasta but i would've liked to add chicken to make the meal more complex but she just wanted it like that. It was a well balanced meal because of the fiber from the pasta and the vitamins from the parsley and tomatoes. Also garlic is very good for your health. I think i coked this meal well and provided my partner with a healthy balanced meal.

Evaluation of Emma's meal

Emma made me Lemon Tuna pasta. I think she executed the task very well as she managed the time effectively and I had my meal when Ms King said that partner 2 should have their meal. Emma was very organised and I could tell that she had practiced at home as she knew exactly what to do. She was also aware of hygiene as she washed her hands whenever she went from vegetables to meat, and she regularly changed knives and cutting boards when necessary. I was satisfied with the final product although next time I would recommend to add a sauce as it was quite bland. A problem that Emma encounted was the quantity of the meal as it served four but Emma solved this problem by working out the necessary amount for each ingredient. I've learned that Emma works well under pressure as she remained come the entire time even if she encountered a problem. She also was very organized and prepared for what she had to accomplish in the hour. Next time she cooks a meal I advise her that she should check how many the meal serves so she can ujust it appropriately.

Vitamin A and C are needed for the maintenance of healthy skin and is found in fruit and vegetables.

I also chose this recipe because of my skill level in the kitchen, as I haven't had that much experience cooking meals so this meal provides me with a simple recipe and this meal also doesn't take that much time to prepare and cook. Also it isn't hard to make the appearance of this meal appetizing.

Calcium:
Is needed for the growth and maintenance of strong bones and teeth. It us found in milk, yogurt and cheese.

Fat / Carbohydrate (sugar):
Fats provide the main source of energy to the body. It is found in foods and drinks that are high in fat and sugar.

Protein and Iron:
Protein and iron are need for the growth and repair of the body and for healthy blood. It is found in lean meat, fish, eggs, poultry and nuts.

Carbohydrate / Fibre:
It is needed to keep the gut healthy and is found in bread, rice, pasta and noodles.

Vitamin A and C:
Vitamin A and C are needed for the maintenance of healthy skin and is found in fruit and vegetables.

Chicken Pasta

Today we made chicken pasta with fresh tomato, basil, chicken, pasta and cream. as soon as we started cooking we learnt that you need to boil the water before adding the pasta, otherwise it takes longer to cook. Next we cut the tomatoes in half but we learnt that it would have been better not to cut the tomatoes because it would keep the flavour in. Then we took the basil leaves of the stem and started the sauce. In a separate pan we cooked the chicken and then we added the rest of the ingredients. Once the pasta was cooked we drained it and added the sauce to the pasta and placed the basil leaves on top of the dish. This dish was very tasty and I look forward to cooking it at home. This pasta dish supplied four of the five food groups. It contained tomatoes for the fruits, basil for the vegetables, pasta for the carbohydrates and chicken for the source of protein. I enjoyed making and eating this dish but unfortunately I wasn't able to eat much of it because I had a tennis competition straight after hospitality.

Fried Rice

Unfortunately I missed the lesson that we cooked fried rice, but I heard that it was a delicious meal. I have the recipe so I will look forward to cooking it at home.

Theory Lesson

Today we weren't working in the kitchen cooking but we were working in the classroom. This lesson we discussed were handed our assignments and we discussed what would be required of us. I am excited to get started with it as it sounds like an enjoyable assignment compared to a SOSE assignment.

Comparison of Two Desserts

Today in the kitchen we made two different desserts. We first made chocolate chip cookies as the unhealthier option and then we made raspberry and pineapple parfaits as the healthier option. The cookies were full of carbohydrates, sugars and fats and the parfaits were made of fruits and non fat yogurt. Although cookies are a nice treat to have every once and a while, the parfaits were the healthier option and tasted just as good as the cookies. The cookies were quite rich so they gave me a sickening feeling after I consumed a few but the parfaits were a lighter option that left me with a refreshing feeling. After experiencing both desserts I think it is better to go with the healthier option more often as it has a nicer affect. I enjoyed this lesson as it gave us a chance to compare both desserts and we discovered that the healthier option is yummy too.

Lettuce Wraps

Today we made ice berg lettuce wraps. This was a fun and easy snack to cook. The fresh and crunchy lettuce was a nice contrast to the turkey. The lettuce and the vegetables mixed in with the turkey was a good source of fibre, the turkey provided us with a source of protein, and the sesame oil provided us with a source of fat. I prefer this snack over the potato jacks because it leaves me with a fresh sensation. This is a healthy balanced snack that I will enjoy making in the future.

Potato Jacks

Today was our first lesson in the kitchen and we cooked potato's with sour cream, cheese and coleslaw. I was partners with Sabrene and we both learnt how to chop more efficiently and how to choose which knife would be most efficient. We finished quickly and had plenty of time to taste our dish. I was surprised at how good it tasted. We all agreed that if we saw the dish we probably wouldn't of tried it, but making it ourselves showed us what the ingredients were and how it was made. The dish was a balanced meal because as it contained carbohydrates from the potato and sour cream, and fibre from the vegetables and fruits. Unfortunately there was no source of protein, but this dish is a healthy, balanced and tasty.

First Lesson

Today was our first hospitality lesson. Ms king was away so we had Ms baker as a substitute teacher. We were in the computer rooms this lesson being informed on what we would be doing this semester and we leaned about the five food groups. This lesson was exciting for me because I thoroughly enjoyed hospitality last year and I have chosen it as one of my subjects for next year. I love learning about healthy eating and balanced diets. I also find cooking interesting because you find out how meals that you are served in a restaurant are prepared and the ingredients required to make it. When you cook for yourself you know the ingredients and the method of the meal and you know what you are eating. I can not wait till are next hospitality lesson.
